Reflux Friendly Cooking: Apple French Toast Bake

    Apple French Toast Bake. Breakfast can be a difficult meal for many with acid reflux. This breakfast dish is warm and filling but is still very easy on the stomach.   



    Cooking spray

    1 egg, beaten slightly

    pinch of salt

    1/2 apple, peeled and cut into very small pieces

    2 slices rice bread, cut into small cubes

    1 splash of rice milk

    2 Tbs. of maple syrup



    Preheat oven to 350 degrees. Spray a small ramekin with cooking spray. In a small mixing bowl, gently mix together the egg, salt, apple, bread and milk. When the bread is coated with the egg and the milk, pour the mixture into the ramekin. Bake until the egg and bread set and begin to turn golden brown (about 10 – 15 minutes). Remove from the oven and top with the maple syrup. Serve warm.
