Reflux Friendly Cooking: Spinach and Almond Stuffed Chicken Breasts

Spinach and Almond Stuffed Chicken Breasts. Placing filling of any kind inside of a chicken breast makes the meal feel more elegant. The beauty of this recipe is that you can substitute any veggie that you can tolerate for the spinach. My son with reflux tolerates spinach well so we often have it as a side dish.
4 6-oz boneless, skinless chicken breasts
2 cups of baby spinach, chopped very fine
2 Tbs. roasted almonds, chopped
2 Tbs. grated Parmesan cheese (or rice cheese can be used)
1 tsp. of salt and pepper
1/4 cup of sour cream (if dairy is not tolerated, try using plain coconut yogurt)
In a small bowl, combine the all of the ingredients except for the chicken. Cut a 2 inch pocket in the thickest part of the each chicken breast. Stuff a quarter of the spinach mixture into each breast. Season the chicken with salt and pepper. Spray a large skillet with cooking spray or coat with 2 Tbs. of olive oil. On medium-high heat, cook the chicken breasts until golden brown and cooked through, about 5 – 7 minutes on each side.
