Turkey Breakfast Casserole

  • Many people with acid reflux find that loosing some weight helps ease their symptoms.  It can be a daunting task, especially around the holidays.  One of the most important meals to consider is breakfast. If you get a good breakfast in you first thing in the morning it can help strengthen your resolve for the rest of the day.

     

    This yummy breakfast casserole is reflux friendly, high protein and low calorie.  If you find that onion bothers your reflux you can remove it from this recipe. This can be made ahead of time and frozen in single serving sizes.  It is also great on a whole wheat english muffin.

    Turkey Breakfast Casserole

     

    1 package Lean Turkey Breakfast Sausage

    2 cups of Egg Whites

    4 large eggs

    1 1/2 cup chopped fresh spinach (or use another non-starchy veggie if you hate spinach)

    1/2- 3/4c chopped green onion

    2/3 c. fiesta blend cheese

    Seasoning to taste (We like Cavanders Greek Seasoning with no salt)

     

    Brown the turkey in a frying pan and set aside.  Use non-stick cooking spray not oil to brown it.  Stir eggs, egg whites, spinach, green onion, seasoning and browned turkey in a bowel.  Transfer to a 9x13 baking dish (sprayed first with cooking spray).  Sprinkle the cheese on the top of the casserole.  Bake at 350 degrees for about 25 minutes or until cooked all the way through.  Slice into 8 slices.

     

    With Cheese:

    165 calories/ 8g fat/ 21g protein/ 2.5 carbs

     

    Without Cheese:

    135 calories/ 6g fat/ 19.5g protein
