I think the variability of stomach issues can be the hardest. It can be so hard to figure out what the cause is. I know for my "best" refluxer - he has a sensitive gag and will easily vomit just from post nasal drip. If we hear him coughing we go running with his bucket.
You may want to consider keeping a food/vomiting log - see if you notice any correlation between what he eats, when he takes his medications, and his symptoms.
If you notice any trends, you may then want to take this to his doctor and see if anything can be done. For example, perhaps it would make sense to take his mood stabilizer at a different time of day?
