I have this problem as well and it got worse as my reflux got worse. My assumption is that with the irritation in my esophagus anything out of the ordinary is going to cause increased irritation. I have not had too much of an issue with ice cream (although I'm beginning to think it worsens my reflux - I'm just trying to pretend it doesn't) but ice cold drinks are treacherous. It does seem to help me if I drink from a straw rather than straight from the cup. Straw drinking in general leads to smaller amouts going down with each swallow.
With the ice cream it may be helpful to let it sit for a little bit to become softer and then make a conscious effort to really have it melt in your mouth before swallowing it.
