Confused about my allergies...

I just went out for Tapas with a group of friends.  There were a lot of different seafood dishes being passed around and I could smell some of it and a few minutes later, I started coughing, my throat was itchy and it was kind of embarrassing.  I never get hives or itchy hands and have read so many posts and it sounds like this is such a common symptom.  I'm just wondering if mine could have been a high pollen count kind of allergic reaction since we were eating outside. I am 36 and never had a single allergy as a kid and just within the last couple of years I have developed allergies (seasonal, indoor/outdoor mold, mites and crab and lobster).  I am so confused and my husband seems to think that allergists are a joke. Has anyone gotten a second allergy test done and if so, were the results different? And, if they are different, do you get a third test done or just cary an Epipen and eat what you want?
