Tofu has lots os proteins and can be bought in soft or firm textures depending on the dish you're cooking. It has a lot of protein, but if food allergies are a concern, then you need to note that tofu comes from soy, one of the Big 8 Food Allergens.   There's also a product called Ener-G Egg Replacer that I have seen in vegan cookbooks. It's made from potato starch and tapioca.   When you're looking for substitues, be careful not to swap out one allergy food for another?
