How can I treat (prevent reaction to) shellfish allergy?

My daughter just had her 21st birthday and as a present, aquired a shellfish allergy. She never had a problem before, in fact, the only foods she likes are seafoods and in particular -- crab and lobster. Ironically she is a veterinarian's assistant and is studying to become a marine biologist. She is absolutely crushed. Is there anything she can do in order to allow her to eat these foods?

She needs to carry an epipen at all times. I don't know if handling shellfish can cause systemic reactions or not, but I certainly would not ingest it.
