The secret tip here is that risotto -- the epitome of elegance and "gourmet eating" -- is a great "fast food". As John notes, it's a meal in 30 minutes. And all it takes is a well-stocked pantry. I cook for my family -- and the four of us eat together EVERY night -- and for me, risotto is my "emergency" meal; what I cook when i'm just rushing home without an idea in my head an no time. I sometimes use leeks instead of onions; i have packs of frozen, de-veined shrimp in the freezer (and also roasted peppers, etc.) Occasionally I throw in some frozen peas (don't tell my kids); but it's a great way to get food on the table with verve.

So, here's the challenge: What are your high-quality "cheat" meals -- ie, meals that taste great but don't take a lot of work (hint: Stay tuned for my polenta recipe)
