Q: If no one has records of my diagnoses, can I omit that on a health insurance application?

I'm trying to get health insurance but I'm denied because of my bipolar diagnosis. I have been off all of my medication for two years and have had no problems. I cannot find the first psychiatrist who diagnosed me, the second psychistrist lost my records when he changed offices, and the pharmacies no longer have any records of my prescriptions. If no one has records of it, should I try to contest it/amend it, or will that just make it worse? What will happen if I try to apply for health insurance without bringing it up, considering no one seems to have records of it?
