Cranberries are a Thanksgiving classic, but traditional cranberry sauce can be full of sugar and high in calories. Try this tasty recipe for a new way to incorporate cranberries into your Thanksgiving dinner. 


Wild Rice and Cranberry Salad

This recipe serves 8

 

Ingredients:

1 cup of uncooked wild rice

1 bag of fresh cranberries

1/4 cup of orange juice

1 tablespoon lemon juice

1/4 cup of sugar

1/2 cup chopped walnuts

 

Cooking Instructions:

1. Cook the wild rice according to directions. When cooked, run under cold water.

 

2. While the rice is cooking, boil the orange juice, lemon juice and sugar in a saucepan. Let the mixture boil for 1 minute, turn to a simmer and add the cranberries. Stir while cooking. When the cranberries start to pop, remove from the heat.

 

3. When the rice is cooked, mix with the cranberry mixture and put in the refrigerator. Garnsih with walnuts when ready to serve.
