Lowering levels by diet and exercise

my cholesterol level is 298/ ldl cholesterol is 205 and I want to change this by diet and exercise. I just got a booklet from my doctor's office about what to eat and what to avoid. I am overwhelmed by this. Do I just start this diet change gradually or do I just jump in there and start it right away? I feel like I am going to miss a lot of the foods I normally eat.
