It would be easier to pinpoint the "problem" areas if you shared the breakdown of your cholesterol levels - HDL, LDL, Triglycerides. Different foods have a different effect on your various levels.
The cast iron cookware, it is possible that iron is leaching out of your cookware causing your iron intake to increase. This may be affecting ferritin levels, but mostl ikely not cholesterol levels. Regardless, excess iron intake is not beneficial.
Being physically active and supplementing fish oil are positive steps I recommend you continue. Be sure your MD is aware of any supplements you take.
Wine - Even though red wine in moderation can promote heart health, I recommend eliminating wine altogether if triglyceride levels are high. At least until you get your levels under control.
Peanut oil - While peanut oil does contain poly and mono unsaturated fats, it is not the best choice for heart health. I recommend switching to olive oil (my first choice) or canola oil.
