Chinese scientists say a little-known type of cholesterol called oxycholesterol may do the most damage to the heart. In a new study, the researchers found that hamsters who were fed a diet high in oxycholesterol accumulated more--and larger--deposits of cholesterol in their arteries that those that were fed a diet high in other types of cholesterol. Oxycholesterol is formed from a reaction of fat and oxygen, as in the grilling or frying of meats. It is also added to food during processing in the form of trans-fatty acids or partially hydrogenated vegetable oils to improve taste, texture, and shelf-life.
