Hi Dr. Lasich!
Ever since I saw your post declaring a $3 healthy meal challenge (per person) I have been wanting to contribute a recipe.
I cannot take credit for the following recipe. My husband invented it when we were having some rough financial times. It is very good in my opinion and can be adapted to however one likes it....spicy or mild.
He has named this dish Island Chili.
Ingredients:
* 2-15 ounce cans of diced tomatoes
* 15 ounce can of chunked pineapple
* 15 ounce ca of kidney beans
* Rice of your choice
* Spices of your choice such as red pepper or chili powder
Strain kidney beans and simmer with the diced tomatoes for about 20 minutes. Add pineapple juice and pineapples and simmer for extra ten minutes.
Then add over rice!
And you are done.
It is frugal, tasty and fairly healthy too.

Hey Merely Me,
I think that we might give the clown and king of burgers a run for their money. Healthy meals can be cheap. I love the sweet and savor balance in this recipe that reminds me of sweet and sour pork, but without the meat. Excellent. I cannot wait to try it. Personally, I would either use brown rice, farro or quinoa to dish the chili over. I hope more people like you go through their recipe boxes and share.

Glad you like the recipe idea. Been thinking about it for awhile. I love brown rice...will tell my husband to try this substitution.
I will definitely ask the folks over on the depression site to chime in with any recipes they have. It really is a good idea.
