Not all cacao is made equal the only cacao that will bennefit your health is a hi flavonoid one so no roasted beans and as less prossessing as possible like Prof.Rodger Corder mentioned in his Presentation: http://bit.ly/nDTv8u
Also Phillip Minton,MD wrote a book about chocolate http://healthychocolatebook.com he was interviewed by this radio station: http://www.wnbnetworkwest.com/WnbAuthorsShowWellness.html
There is a new brand that inports his own beans from Peru (only the best) and use only the best technique to protect the flavonoids so they remain in the chocolate.

Did you mean not drink milk with the chocolate, or not drink milk at all?
When you eat (dark) chocolate, drink something like soymilk, or purified water
if you need a liquid. Just don't drink milk at the same time you are eating chocolate.
If you like milk, drink it with other snacks or meals. You get the benifits of the dark
chocolate when you don't drink it with milk because milk prevents this.
