    Just wondering why you would consider planting parsnips in your garden, they have a very high glycemic index. 

     

    After reading some of Dr. Bernsteins book, about low-carb diets, carrots   and corn are some other vegetables  on his probibitive list.

    Maybe eggplant or spaghetti squash would be good choice.

    Thanks for your comment. We already plant eggplant and we especially enjoyed the japanese style eggplant last summer.  Planting parsnips would be for taste alone and for the challenge of leaving them in the ground long enough to grow (a challenge we had with carrots).  The glycemic index of veggies hasn't been much of an issue for my highly active son who hates potatoes and rice. We don't have a lot of bread at meals so veggies like carrots and parsnips work fine for us.  Thanks for the suggestion of spagetti squash!
