Hey, I just started college this year, and boy do I wish I knew how to deal with dining hall food a little better! We have some really great healthy options at my college, but carb counting is hard. Tell your friend to try and find out if her college dining service publishes nutritional information for the foods it serves. Some schools do that (mine doesn't, unfortunately), and it should help a lot with carb counting, although it's often difficult to measure out the serving sizes of foods accurately.

I attend the University of Colorado and dorm food is a disaster for type 1 diabetes. They have been getting better about it but I just avoided it... I only ate the protein and veggies there and stocked up on quality high fiber carbs from the store. I eat about 80% of my carbs in the morning(fruit, V8 juice, NO BREAD AT ALL) I stay away from everything white in color besides cauliflower. The best thing to do is to carry around the obvious sugar supply at all times especially if your active, and I constantly have turkey jerky in my backpack with some walnuts or almonds for when I get hungry. Your friend needs to understand his/her insulin and blood glucose levels and the interaction with foods he or she is consuming. You should make sure your friend talks to a good doctor to get all the info necessary to prep for college.
