". . . foods that contain carbohydrate are important sources of energy, fiber, vitamins, and minerals and are important in dietary palatability." Fat is also an important source of energy. People on low-carb diets tend to eat what few carbs they do eat in the form of low-carb high-fiber veggies that contain more vitamins and minerals than the starchy foods that they replace. The new ADA recommendations are certainly better than the old ones, however, as they recommend whole grains instead of the white bread, white rice, and flour they endorsed in the previous versions.

just as we tend to eat more calories and carbs than we realize, just as you found out. a couple of years ago, i also carefully measured everything i ate for several days, subsisting on my typical primary intake of low carb veggies, low fat protein, low fat dairy and just a little fruit. NO GRAINS, NO STARCHY VEGGIES - this is low carb, right? total daily carbs ranged from 181 to 102 and fiber ranged from 15-30 gms so my net carbs were 100-150. It wasn't a low carb diet at all, but glancing @ the list of what i ate, most health care professionals would call it a low carb diet.
