What’s Wrong with Saturated Fat?

By David Mendosa, Health Guide Saturday, March 24, 2007
Update, 9-19-11: As I learn more about diabetes and about nutrition my views evolve. Back in early 2007 I wrote this article saying that saturated fat is bad for us. That was then and is still the accepted view of the American medical establishment. But I don't buy that view any more. My article at&n...

In your article you refer to spectrum spread as though it were fundamentally different from margarine. It's a vegetable fat-based spread -- in my opinion, that makes it margarine. (I use lactose-free Celeb, which is a store-brand dairy-free non-hydrogenated margarine, which is probably neither here nor there.)

The problem with saturated fat comes when you also consume it with moderate-to-high-glycemic foods. The combination is both gluco- and lipotoxic. It damages beta cells, which leads to higher post-prandial BGs and the cascade of adverse events that follow.

A person can consume a reasonable amount of saturated fat if they avoid the fast-acting carbs.

Sir,

Whilst I do respect your experienced opinion,I cannot understand why someone with your knowledge would actually believe that saturated fat/cholesterol CAUSES heart disease!!!

For some unfortunate souls, high inherited cholesterol is usually fatal early in life, however cholesterol in the body (and especially in the arteries) is there because it is the bodies response to inflamation,so if your arteries are inflamed (sometimes due to high blood sugar levels) then your cholesterol will be higher as well.Question: if cholesterol is so bad why is there no cholesterol in veins? Another question: why is the biggest concentration of cholesterol in the body located in the brain?

Framingham studies confirm that in older folks (55+) cholesterol levels make absolutely no difference to longevity, especially in women, where those with the highest levels live the longest!!!!

This crazy notion that somehow saturated fat,a food eaten by mankind for centuries is somehow bad for us is absurd, and I guess we can all thank Ancell Keys for that!!!! My ancestors (farmers) all had high saturated fat diets and the youngest to die was my father, aged 84.What they didnt eat a lot of was complex carbohydrates!!!!

Like I say you are entitled to you view,as am I,however until we all accept that excessive carbohydrate consumption, and lack of excersize are the true culprits in whats happening to the world and the soaring rates of obesity, diabetes 11 and CHD.(despite what the drug company barons and thier servants in the the ADA say) continue and whilst consumption of saturated fat is steady,or decreasing the rates of the BIG 3 continue to climb, ever so higher!!!

If you want to read a something that has the most damming evidence that cholesterol is NOT the real culprit in CHD try Anthony Coplo's "The Great Cholesterol Con" Not the authours opinions necessarily, but cold hard researched medical facts, taken from all the trials ever done on this subject. If your mind is closed then fair enough, but if not, have a read,at least (if nothing else) it will give some balance to your beliefs.

Regions with a high-carb low-meat diet such as rural China have low rates of diabetes. In the west, vegetarians have lower rates of diabetes. A low fat vegan diet has been shown to reverse diabetes and advanced heart disease. Perhaps our ancestors exercised enough to counteract effects of saturated fat. OTOH, they didn't have Big Macs.

Fat or sugar? What if it is fat and sugar? Our bodies have millions of years of evolution tied up in our genes. We are genetically designed to survive famine not obesity. Saturated fat is not as harmful as sugar and starchy foods like french fries. Fries pack a double whammy of trans fat and starch i.e. sugar. I am not saying Taubes is wrong but he is not right. There more to the story.

Saturated fat may or may not be safe but science and politics might never be able settle the question because of orthodox epidemiological opinions.

Most wild game is very lean and tough. Very little saturated fat there. Fructose is couple with fiber in nature. Fiber slow insulin spikes and high gluclose rush. No magic pill, diet just moderation and balance.
