I just had a delicious salad for lunch, and except for the olive oil and lemon dressing, it was all fresh from my garden. My salad included baby Chinese cabbage, baby collard greens, red amaranth, baby Swiss chard, some dark red oak leaf kind of lettuce that is tender like Boston, and some purslan...

Gretchen -
My children are fighting over who gets to harvest our lettuce everyday and my once picky son with diabetes is eating salads fresh from the garden! This was not happening last summer, but because he and his sister grew the lettuce from seed they can't seem to get enough. We'll have to add more greens next year! Thanks for the "green" ideas - Kim Benjet

Kim, great idea about getting the kids to plant the garden. Let them choose something they've never had before next year and expand their horizens.

David, you're all invited for lunch tomorrow. If you can't make it then, the Chinese cabbage might be gone <G>.

Gosh, Gretchen, you make it sound so tempting and easy! I do have a small patch directly outside my back door that would work..unfortunately I also have arthritic knees and back problems and the thought of all the bending and weeding needed to garden sorta puts me off. I guess I'd rather sew quilts than garden, alas. But there is a good Trader Joe's not far from me and they do have good bagged salads.

A very interesting article.

I, too, enjoy gardening and am very interested in the Chinese wolfberries you mention.  Could you tell me where I could buy the seeds?

We grew for the first time this year,  Sweet Potatoes, which as you know is an " anti-diabetic" food, and they were a great success in our Montreal garden.
