Q: causes for rapid drop in blood sugar after eating?

Why does my blood sugar spike 30 minutes after eating (usually to 130), then drop back to the mid-eighties within an hour? I thought the "normal" curve returned to pre-meal levels in two hours, not one. I've read that this can happen with hyperinsulemia, but it still doesn't quite make sense to me.

The "normal" curve for pre-meal levels in two hours is 140-180.   Of course 30 minutes after eating your blood sugar is 130 because you have ingested carbs, I am sure, in your meal plan.  The carbs will immediately cause your sugar to rise.  The drop back to the mid-80's within an hour seems to me that you have not adjusted your insulin to how much you are eating at your meal.   A sliding scale for your dosage of insulin before your meals will help.
