Hi Melissa, it is often a case of what was eaten, some foods even in excess will have a minimal impact on your blood glucose, examples are protein and fats from meats and many vegetables.  However foods that contain simple carbohydrates will have a noticeable effect even in small amounts, examples a doughnut and most fruits some vegetables such as corn and peas.  Each of us reacts differently so by testing we can find foods that are friendly to our systems as well as those that we need to limit.
