Q: How much of a rise is acceptable in blood sugar levels one hour and two hours after eating?

Since there's a significant body of clinical evidence that cellular damage occurs at 140mg/dl, I plan my meals so I don't exceed it. 

 

Since changing the way I eat over 4 years ago, my highest BGs occasionally gets 122 mg/dl, but stays under 110mg/dl most of the time.

 

My peak BG is reached between 45min to 1 hr after my first bite and returns to pre-meal BG by the time 2 hrs is reached.
