Q: How can I get more fiber in my diet?

I am a type 2 diabetic, diagnosed November of 2001 and am diet controlled.  Last summer/fall I noticed my blood sugars were much higher than normal.  After much experimentation and working with my doctor, I discovered that I had developed an intolerance for gluten.  A cracker can raise my blood sugar to 250.  Because I can no longer eat the whole grains I am used to, I fear I am not getting enough fiber in my diet.  I have tried supplements like Benefiber, but my system does not tolerate it very well.  Do you have any suggestions?  Thank you.

I use Fiber Choice, which is a different kind of fiber (inulin) than that in Benefiber. I think inulin is easier on the digestive tract. Also, I read somewhere that inulin is good for diabetics (but don't quote me on that!).  Also, it comes in sugar free varieties.

 

There are also some double fiber breads that might help, but you still have to count the carbs.
