Q: sugar spike

i am type 2 diebetic.  when i eat simple carbs my sugar spike (140-160) will happen after one hour instead of a normal test range of two hours.  after two hours my glucose level is back to normal (80-110).

 

i have been testing my levels after two hours.  my results would be normal when in fact it actually would spike after one hour.  i thought i was doing well when in actual i was not.

 

why is this happening?

you might have a fast stomach- some foods that slow the food down are soluble fiber, spices, and fat
