Yield: 2/3 to 1 cup

 

1 cup (6 ounces) pitted prunes, coarsely chopped

 

1 cup minus 1 tablespoon water

 

Additional water as needed

 

1. Put the prunes into a heat proof bowl. Bring the water to a boil and pour over the prunes. Set aside for 15 to 30 minutes until the prunes are soft.

 

2. Combine the prunes and soaking water in a blender. Blend at high speed until the puree is completely smooth, adding additional water, a tablespoon at a time, if needed. Use immediately, or place in an airtight container and store for up to three weeks in the refrigerator.
