Did you forget National Meatloaf Appreciation Day?

  • I did, and I feel terrible about it! Meatloaf is one of those foods I remember so distinctly eating as a kid. When I heard about National Meatloaf Appreciation Day, I realized I had completely neglected it for the past 12 years!

    Shame on me, because meatloaf is still one of America's greatest comfort foods. There are thousands of variations; FoodFit offers everything from Old-Fashioned Meatloaf to Turkey Meatloaf with Sun-Dried Tomatoes.


    It's (slowly) getting chillier here in the nation's capital, and I had a craving for a taste from childhood, so I made Beef Meatloaf with Mushrooms and Onions, with sides of Roasted Garlic and Scallion Mashed Potatoes and Traditional Applesauce.

    I made the applesauce a day in advance so it would have plenty of time to chill. I always imagined applesauce as a big production involving precise measurements and constant vigilance of the stove. To the contrary, this was one of the simplest things I have ever made, and by far the best applesauce I've ever tasted. This could become a weekly routine.

    The mashed potatoes were just as simple, if only slightly more involved because of some prep work. The kind of prep work that makes your apartment smell absolutely delicious. Roasted garlic can most likely improve any meal (and it's good for you too!)

    Now onto the main event. Meatloaf has been around for as long as people have mixed ground meat with vegetables and other foods to make meals easier and more complete. To make mine, I mixed the ingredients and packed them into a loaf pan to get the correct shape. However, the mixture is firm enough that it can be formed by hand.


    It came out better than I had hoped, with a nice browned crust and moist and juicy center. The mushrooms and onions baked right into it gave the meatloaf a kick. Now it's time to indulge in one of the benefits of making big meals - leftover sandwiches!
