I worked in great steakhouse for 8 years, and I should warn you that many of them cook with butter, and loads of it. The remedy is to simply order your veggies and steak without butter. It comes out great still, maybe "looking" dry, but it will save you a ton of guilt. Oh, and watch out for the salad dressings too.
