Black Bean Brownies

  • I have reached the place in my life where I no longer want to count calories. I only want to eat really well and feel great. I have begun adding different “super foods” into my desserts to help keep me on track. The consistency of this brownie batter is eerily like a boxed mix, yet contains sweet potatoes and black beans.



    1 1/2 cups canned black beans, drained

    1/2 cup cooked and mashed sweet potato

    2 Tbs. canola oil

    1/2 cup applesauce

    1 egg

    1 tsp. vanilla extract

    1/4 cup sugar (plus more to taste)

    3/4 cup flour (I used oat)

    1/2 cup cocoa

    1 tsp. baking powder

    1/4 tsp. salt

    1/2 cup chopped walnuts

    Preheat oven to 350 degrees. Spray or oil an 8 x 8 baking dish. In a blender or food processor, combine the black beans, sweet potato, oil, applesauce, egg, vanilla and sugar. Mix until smooth.


    In a large bowl, mix together the flour, cocoa, baking powder, and salt. Stir in the wet ingredients and blend slowly. Taste the batter and add sugar if you prefer it to be sweeter.  Stir in walnuts.


    Pour the batter into the baking dish and bake until batter is set, about 35 – 40 minutes. Let cool, then cut into squares. Serve with a scoop of coconut ice cream or a dollop of creamy peanut butter.
