My favorite way to eat ginger is in a morning Smoothie.

I use vanilla yogurt, apple juice, frozen peaches, a one inch chunck of raw ginger (peeled), some cinnamon and honey. Blend all ingredients in a blender until smooth and ENJOY!!! It is soooo delicious and a great wat to start your day!
