Question: I know that cooking vegetables causes them to lose some of their nutrient content and that if you cook with wine you burn off the alcohol, if I cook with dairy does it lose the calcium?
Answer: That’s a great question. While cooking does affect the nutrient content of vegetables, it does not deplete the calcium content in dairy products. Minerals are more stable in heat than vitamins and other nutrients so cooking does not affect calcium the way it would affect a water-soluble vitamin.
