Increasing size of one muscle but losing fat allover

Basically I want to lose some fat off my shoulders, back, stomach and legs but not from my behind. I know it isn't up to oneself where you lose the fat but hey, I'm giving it a go. I've been doing all the right things, eating healthy(vegetables, water, lean protein) and doing butt exercises but the thing I'm wondering about is:

Do I eat protein before I go to sleep to help prevent the muscle from deteriorating or do I eat nothing like your supposed to do when you're on a diet?
