If you are undereating to support weight loss while you "exercise excessively" - your scale can register strange weights (like an unplanned weight gain.   You need to eat protein - lean - and enough of it to support the exercise plus drink adequate water and watch the grains which if not portion controlled can add up to alot of calories.   So eat adequate amounts of proteins like beans, fish, lean white meats, soy, fat free dairy and small servings of nuts along with fruits, veggies, small servings of healthy fats and portioned whole grain/high fiber carbs.  You need to work out a menu plan and especially follow it on exercise days.
