When I found out that I had Genital HSV 1, me and the person i was with at the time were still together and were still having unprotected intercourse. When this was happening I was NOT at all with any sores or outbreaks, and I did not have any tenderness, NOTHING! When we finally parted, he and the partner he was cheating on me with claimed to have had an STD test, specifically a test to check if they had Herpes. They stated that NEITHER of them had it, which left me SOOOOO confussed! How is it that they are "perfectly fine" and im, well....not?? Could they be not telling the truth?

It's possible that they have not been tested or been honest about their STI status, however, it is also possible that neither of them have herpes.

You may have had herpes longer than you realise, particularly if you do not experience symptoms. You can't just assume that they person or people you were sexually involved with at the time of your diagnosis were responsible for passing it on to you.
