Q: can first outbreak of HSV be mild, and second outbreak be agonizing?

Was with same partner for five years who had cold sores. Two years ago he tried Valtrex for an outbreak, cold sore cleared, we waited about a week before he performed oral sex. About two days later I developed a really small but quite painful vesicle on genital area, went and had cultured but was negative although physician felt that it was most likely hsv given the history.  I have never had a recurrence until now and this is full blown and agonizing.  Have gone for repeat cultures, unconfirmed as yet, but not much doubt as pretty classic symptoms.  I am not with same partner and had sex with a new partner and condom had a rip which we didn't notice right away.  48 hours later I developed massive outbreak.  This partner is telling me that he had just recently had std testing (negative for antibodies) , has no symptoms now nor ever has, and no other partner except for me since being tested. 

I want to give him the benefit of doubt and that he is being truthful about not being hsv +, but: 1. could he have and not know because always dormant  2.had testing but false/negative perhaps or 3. maybe was infected but had no symptoms and testing was performed before antibodies were present?? Could there be a chance that I did become infected two years ago and it was dormant for me all this time, and coincidentally flared after having unprotected sex with a new partner?  My physician feels that the coincidence is just too great and that I contracted from this new partner given the unprotected sex and rapid onset of symptoms.
