    I, too, have given up corn altogether.  Like Elizabeth, I grew up and still live in Wisconsin.  Sweet corn was my favorite summer vegetable until microscopic colitis two years ago.  I was just talking to a friend today about all the things I can't eat - he pointed out that many of them aren't healthy, anyway.  Will have to roll that over in my brain a few times.

    Hi Laura:  Well . . . no chocolate, no brats or italian sausages, moderate, occasional broccoli, no watermelon, no raisins or other dried fruit, no frozen custards or rich ice creams (I am lactose intolerant as well but do drink lactose free milk).  No popcorn, no pork, no blackened fish or chicken (the spices bother me), no french fries (too greasy).  No caffeine, no beans or lentils. No tomatoes (occasional tomato sauce ok), no blueberries - strawberries and raspberries are ok.No cauliflower  Apples ok - one a day with the skin on.

     

    I'm also gluten intolerant so had 17 years of no wheat, rye, oats or barley before this colitis diagnosis 2 years ago.  

     

    So, what do I eat?  Plain chicken, beef and turkey, string beans, zucchini squash, gluten-free bread, moderate amounts of broccoli, cereals with no fiber, protein bars with little to no fiber (they have to all be gluten free).

     

    It sounds somewhat overwhelming, I'm sure.  One does get used to it, however.

     

    Hope that helps.  Remember, too, that every gut is different.
