I went through the same situation a couple years ago... I had been diagnosed with UC and had been on medicine for about a year, and was having no symptoms.  I did stop taking my meds, and was fine for a couple weeks, but then I started having symptoms again.  Luckily, as soon as I started taking my medicine again, I was okay.  BUT last summer, and then again early this year, I had two really bad flares, and it wasn't even because I stopped taking my meds.  I don't think you want to go through that!!!   I would suggest before you stop taking your medicine (or continue to do so), maybe you should have some tests done again - maybe you were misdiagnosed originally, and you really don't need Asacol.  Have you asked your doctor abotu that?  If you do have UC, I think it's worth it to take some pills every day to prevent having a flare, even though it seems really inconvenient sometimes.  Good luck!
