In the world of testing for celiac disease there are a lot of false negative's and a lot of false positives. You also may not have celiac, but, like me, you may be gluten-intolerant.
I recommend going gluten-free for at least 3 months. See if your symptoms get any better, even a bit, and if so continue for another three months.
I was Dx'd with both IBD - Colitis - and IBS more than 10 years ago. But, at no time in the first 9 years were extreme bloating or gas part of my symptom profile. That is until April 2009 - from that point on everytime I ate I got extremely bloated and gassy, to the point that I didn't want to eat anything. I went to my GI, he agreed it wasn't my IBD or IBS, tested me for Celiac, said the tests were negative, but since I was game he suggested I go gluten-free for 3 months anyway.
I started to feel slightly better after a few weeks, and at the end of 3 months felt much better, and now, 8 months gluten-free I have no bloating, no gas, no pain. It's not as hard today as it was even two years ago to eat gluten-free. My mainstream grocery store has gluten-free pasta, I can buy GF baking mixes, and crackers, etc. But you do have to be diligent. Don't cheat. If gluten is your problems, and you start to feel better not eating it, it won't be worth it to eat a cookie or cake or pizza with gluten in it.
