MS and Diet: Eggs

Did you eat your share of Easter Eggs?Yesterday was Easter, the day of many boiled eggs. Some MS diets, especially vegetarian, recommend MSers stay away from eggs. Some of our digestive systems just don't agree with eggs. However, the Easter bunny has other ideas for those of us who are not vegan...

Fun question!

 

I did not directly eat any eggs this weekend.  Personally, I love eggs and a good egg-and-cheese sandwich is often my goto quick meal.  The protein found in eggs helps to keep me going, especially for breakfast or brunch.

 

However, yesterday I did partake in a rich, decadent chocolate mousse my boyfriend's mother had made.  I've never made chocolate mousse and later looked up recipes to get a better idea of what nutritional value was involved.  Yikes, loads of eggs, sugar, and whipping cream.  No wonder my body was saying "stop! stop!" while I was enjoying the taste.

 

So, indirectly, I did have some Easter eggs.  Although hard boiled might have been better.  Undecided

Do chocolate eggs count?

I do eat eggs, but they have to be scrambled or in omelets. Does that count? Do they maintain their nutritional value? I hope so! I love 'em.

since my boys are grown and left the nest i don't do the easter basket thing any more but eggs seem to be a staple in my diet cooked any way but my number one comfort food is soft-boiled eggs served on cut up toast--i never have noticed any difference in my ms when i eat eggs.
