How nice that you help this man. Should you let him skip lunch? First, you should talk with his doctor.
If he gets tired or sleepy around lunch time, food would help combat that weakness or tiredness.If he seems to maintain level energy, he is probably okay without the hassel - to you both - of making him eat lunch. Some people have trained their systems to live on only breakfast and dinner.
If he still strongly opposes lunch and his doctor wants him to eat around lunch time, try another tactic. What about a snack like fruit or maybe a smaller meal? Maybe he would not fight it so much.
I know caring for someone can be a difficult task. I wish you luck.
