Grains, starchy vegetables, sugar, and artificial sweeteners are not part of the bariatric diet! So for many years I missed out on the occasional birthday cake, and grew tired of constantly having egg dishes for breakfast - no matter how creative I got with them. Only recently did I learn about nut flours and the wonderful baked goods that can be made grain-free and bariatric-friendly for an occasional treat or break from the ordinary!
Kelly Brozyna is one of my favorite grain-free bakers. Her recipes produce bakery items so similar to conventional wheat/dairy/sugar versions that no one will feel deprived. Kelly developed these recipes for her family who were suffering from celiac disease, gluten intolerance, ADD and autism, but the recipes are perfect for patients maintaining long-term weight loss from obesity surgery.
Best-of-all, Kelly Brozyna's grain-free bakery recipes are innovative and easy! Here are a few of my breakfast bakery favorites:
Who doesn't love a good grain-free banana bread recipe? Double the recipe and freeze the loaves inside a one-gallon freezer bag. It's quick and easy to slice off a piece in the morning (slice a thick piece and then halve that), lightly warm it in the microwave, smear it with a little Greek yogurt cheese and serve alongside breakfast turkey sausage.
Grain-free egg crepes are wonderful and packed with protein. I prefer mine made perfect for the bariatric diet by filling it with savory meat and veggies and served with a side of fresh seasonal fruit. My favorite filling is chicken, brie, and asparagus!
And my family loves grain-free Chai Granola packed with nutrient-dense walnuts and chia seeds. I serve this over Steamboat Yogurt made using nut milk, and top it with fresh berries -- viola! The yogurt recipe can be found in Kelly's cookbook The Spunky Coconut Grain-Free Baked Goods and Desserts.
As for my next birthday cake, I am sure to try Kelly's recipe for grain-free Lava Cake, which looks chockfull of gooey chocolate goodness. Don't overdo it with this cake as the chocolate potentially can cause dumping syndrome. Instead, cuddle up next to someone special and spoon together (that is to say, share a cake)!
