    Forget Cupcakes

I didn’t even know I had a sugar habit until I did The Whole30 Challenge. Nowadays I eat more “clean” than I ever have in my life and after decades of morbid obesity > obesity > overweight I am now of normal weight. What does it mean to eat clean? Eating clean is the practice of avoiding processed and refined foods, such as white sugar and flour, and basing your diet on whole foods.

Although I kicked my sugar habit on The Whole30 Diet, once in a while I get a craving for something sweet. And once in a while instead of going for my regular sweet standbys like a Paleo Tropical Smoothie or Nothing But Juicy Sweet Tropical Fruit Salad, I will indulge  in something “sinful.’ I don’t mean sinful as in a decadent white sugar and flour cupcake from Magnolia Bakery in the West Village made famous by Sex in the City (although I did have one once). What I mean is sinful Paleo style.

    Paleo Mug Cakes

These single-serving desserts offer all of the decadence of cupcakes, but they are free of white sugar and flour. Made in batches of just one or two right inside a mug, which serves as both cooking and serving vessels, they microwave up in minutes. Once in a while you can indulge your sweet tooth on your Paleo Diet, and it doesn’t hurt that it takes under 5-minutes to do so. Find out what I mean when you whip up my recipe below in a jiffy:

*I discuss the use of coconut sugar in a Paleo Diet in my share post, “Paleo Caffé Freddo.” Please see that article for an explanation on coconut sugar to see if it fits into your Paleo lifestyle.
