    Microwave Paleo Buttermilk Biscuit from Borne Appétit

     

    I enjoyed a couple of RV trips to Cave City, Kentucky this Fall. What a beautiful area to enjoy caves, zip lines, horseback rides, hikes, Alpine slides… and biscuits!

     

    OK, so maybe I did not get to enjoy a biscuit. Maybe it was just a bite of a biscuit. Or two bites. In any event, one can hardly visit the South without succumbing to the siren’s call of southern biscuits and gravy. In a word: Yum.

     

    But I have diabetes, celiac disease and lactose intolerance and an aversion to red meat. As well, I need to strictly manage my diet to control my weight. So, regional comfort foods such as sausage gravy and biscuits are not very comforting for me.

    I was inspired, however, to develop a really good recipe for a Paleo buttermilk biscuit. Let me repeat. It is a really good biscuit. And it’s made in the microwave. So it’s a quick and easy, and really good biscuit. And of course, being Paleo, it’s grain-free and dairy-free. So then, it’s a quick and easy, really good grain-free, dairy-free biscuit. 

     

    It sounds too good to be true. But it is true. Add to that, it can be made two ways: sweet or savory. This is a dense, dry biscuit because that's the way I like it.     Paleo Buttermilk Biscuit from Borne Appétit

    Ingredients:

    1 extra large brown egg, locally farm-raised or organic

    2 TBS coconut flour

    2 TBS almond meal

    2 TBS Trader Joe’s canned low fat 100% coconut milk

    1/2 tsp white vinegar

    1/4 tsp baking powder

    Pinch of salt

    Optional: Add a pinch of chives and a pinch of onion powder to make a savory biscuit

     

    Tools:

    Measuring spoons

    Small microwave safe bowl

    Fork

    Spoon

     

    Directions:

    1. Add all ingredients to a small microwave-safe bowl. Use a fork to stir ingredients into a stiff batter. Do not over-stir the batter.

    2. Use a spoon to gather the batter into a ball. Pick up the ball with clean hands and shape it into a biscuit.

    3. Place back into the bowl and microwave 2-minutes on high power (depending on your microwave power). I used a 1050 watt oven.

     

    And there you have it: One perfect quick and easy and really good grain-free, dairy-free Paleo buttermilk biscuit.

     

    I eat my biscuit with homemade jam that has no sugar added and uses only natural preservatives. I sometimes make my own preserves, but this time around I was fortunate to find some wonderful homemade jams at a shop in Kentucky. Named “Traffic Jam” the cook used a combination of berries, pectin, and grape juice in her recipe. Simple as that!

     

    When I crave the Southern comfort food of sausage biscuits and gravy, I make the savory version of my biscuit by adding a pinch of chives and a pinch of onion powder. Then I split the biscuit and top it with a scrambled egg and my Paleo remake of Paula Deen’s Sausage Gravy.
