This is the time of year when "potluck" reigns supreme. It's certainly a good way for people to entertain during tough financial times. It's also popular because it means people can bring their culinary talents to a party thrown by someone else. But the concept can be a "food mine" for people struggling to have healthy food choices during the holiday season. So let me share a secret with you - whether I'm asked to or not - I pot luck year round - because it means I can be sure there is one dish at a party that I can eat, and even have seconds.
So what are some good "pot luck choice ideas?"
1- Cut up veggies and bean dip or hummus dip
2- A large tossed salad (add beans if you want protein)
3- A large fruit salad with yogurt sauce on the side
4- Berries with some melted dark chocolate dipping sauce
5- Homemade fat free fruit and nut filled muffins
6- A (ground) turkey meatloaf
7- Vegetarian bean chili
8- Sweet potato casserole (made low fat/fat free
9- Carrot salad
10- Baked apples
11 - Low fat bread pudding made with whole wheat bread, evaporated skim milk, egg whites or Egg Beaters as recipe substitutes.
12 - A Chinese stir fry with white breast chicken (made with cooking spray)
With light cookbooks and cooking magazines a plenty, there is no reason for you to fear a potluck assignment.
