Scientists say they may have found out why the French suffer far less heart disease than Americans, despite having a diet high in fat and alcohol consumption, especially wine. Researchers have found a compound in wine called resveratrol, and this compound is found in particularly high concentrations in red wine. Resveratrol appears to "switch on" a survival gene called the sirtuin gene, which decreases the chances of such conditions as heart disease, arthritis, and cancer.
