Bye-bye depression..hello kitchen therapy

The mind is an amazing mechanism. It can do wonderous things. Thanksgiving I was gripped with depression. It went away on 1/08/2011. That was the day we had Mike's service. The depression I had was magnified by Mike's death. When I said my last goodbye, I was lifted up.

Depression is often felt by me. I have a diagnosis os Schizoaffective disorder. That means I have psychosis and Bi-Polar of sorts. I don't get the mania associated with BiPolar but I do get depressed. Depression (at least mine) sneaks up on me. It can last a few days or a month. Then all of a sudden a light switch turns it off. I can blame all kinds of things for my depression, but many times I don't know why I feel down and out.

During the grip of depression I find no pleasure in the things I love to do...cook, bake and write. Margaret says that she knows when I am feeling good when I'm in the kitchen cooking and singing....kitchen therapy. So kitchen therapy lately has helped.

I made a recipe from a church member, "Fat man pie." OMG it is good. There are a lot of calories in it, but it was fun to make. I also made a big Red Velvet Cupcake with a buttercream frosting. This morning I am going to put some Fondant on it. This will be the first time I ever used fondant. I hope I can do it like the bakers on the Food Network. I am a bit apprehensive. I will keep you informed.

OOPS! Got sidetracked bit. I wanted to write about depression. OH NO! Now I'm hungry. I may need some kitchen therapy in a bit. Now I am not focused because my stomach is yelling at me to feed it. 

I am going to go and try an new breakfast dish. Hash brown casserole. Here is how I am going to attempt this. First I will cook some bacon until crispy. Shred some potatoes, fry them in a fry pan, (turning once) shred some cheddar cheese, then combine them into a casserole dish and bake until cheese is melted. OMG! Now I am really hungry!!

Gotta go. My stomach is growling and I need some kitchen therapy!!
