Celiac Disease: Gluten-Free Chocolate Chip Cookies

One of the traditions handed down by my mom was baking cookies with my kids.  It's not an every day thing but a fun treat to have occasionally.  My kids loved the time we spent baking, talking and tasting the yummy concoctions.   When we first learned we needed to pull wheat from our daughter's diet, I worried the baking fun had come to an end.  After a lot of trial and error we came up with some great recipes.  I dare say, you can't even tell they are gluten-free

*Just remember this should only be an occasional treat added to a healthy diet.

Here is our favorite cookie recipe:

GF Chocolate Chip Cookies

Preheat Oven to 375 degrees F

Ingredients:

1 cup packed brown sugar
1 cup granulated sugar
1 cup butter
2 tsp gluten free vanilla
2 eggs
2.5 cups of gluten free rice flower blend
2 tsp xanthan gum
1 tsp gluten free baking powder
1 tsp baking soda

1/2 tsp cinnamon
1/2 tsp salt
1 bag (12 oz) semi sweet GF chocolate chips

Directions:

Beat sugars, butter and vanilla until well blended.  Add eggs and blend until light and fluffy.  In a separate bowl combine rice flower blend (we like Betty Crocker All Purpose GF Rice Flower Blend), xanthan gum, baking powder, baking soda and salt.  Combine sugar mixture with the flour mixture.  Add chocolate chips.  Drop by tablespoons on UNgreased cookie sheet, keeping about 2 inches apart.  Bake 8-10 minutes or until the edges are a golden brown.  Let cool slightly before moving from the baking sheet to cooling rack to prevent breakage.
