Doughnuts, Danishes and Diabetes

What has two thumbs and made breakfast this morning? This girl

That's right - two poached eggs, a slice of sourdough bread toast with cheddar cheese and a pat of REAL butter, a few cherries and milk. Nommers. The best thing: it took about five minutes to prepare and didn't come in cellophane wrap, a paper bag or from an establishment with the word "donut" in its name.

It's not easy to find good breakfast options, especially if you are in a hurry and especially if you are a type 2 diabetic. Most of what we consider breakfast-type foods is pre-packaged confections - think cinnamon rolls or Pop Tarts -- or fast food fried matter and all are high in calories, sugar and fat.  Not to mention, loaded with carbohydrates. Think about it, what is usually on the breakfast menu at home or on the road? Cereals, bagels, muffins, doughnuts, pancakes or waffles dripping in sweet syrup, some form of potato. Those gigantic muffins are not helping you control your blood sugar AND they are giving you a muffin top! Insult to injury!

I have made it my most immediate mission to find tasty sustenance for 7:00 am. One can't eat eggs and bacon every day.

This is a challenge! However, in the name of science - I'll take this on.

I don't like yogurt. I know it seems benign but it's sneaky. You think it will be sweet and then WHAM it's not - its tart. Yet, on my weekend trip to the grocery store (I like to do my shopping on Friday nights. How sad is that?)    On Monday I had Stonyfield Farms cherry yogurt but here's where it gets interesting: I added walnuts and fresh cherries. I gotta say, not bad! On Tuesday I had Stoneyfield Farms vanilla yogurt and this time I added almonds and banana slices. Success!

It's not perfect - there's still a lot of sugar in that yogurt and sourdough bread isn't the best of all the bread options --   but I think we're getting somewhere here.

What'll be on my plate tomorrow morning? Peanut butter toast? Or a nice turkey sandwich? I don't know yet - but I'm kind of excited to find out.

Now, to make oatmeal more appetizing.
