Mangos are a relatively low acid fruit and you can find fresh peaches just about everywhere right now. Popsicle molds can be found in the seasonal section of most stores (I recently saw them in our local drug store). Stay cool and enjoy!
Ingredients: (for 6 popsicles)
1 cup of pureed mangos (from peeled and seeded fruit)
1 cup of pureed peaches (from peeled and seeded fruit)
3 Tbs. sugar
1 squeeze of lime or lemon juice
Mix the pureed fruit together. Add in sugar and a squeeze of lemon or lime juice. Mix gently. Fill the popsicle molds leaving a little room at the top for expansion. Set the lids in place. Freeze until firmly set (about 3 hours). When ready to serve, run warm water over the molds and the popsicles should come out smoothly.
